Non-Enterprise editions
It is possible to do this in versions later than 3.5.
Enterprise
In the Enterprise edition of Retain, you could normally only add selections to the wallchart which worked against fields which did not require a date range. The exception to this was Availability which was added as a 'Special Selection', as it was a particularly useful field to select against.
However from version 3.6 onwards, Retain will allow special selections to be made against a variety of fields. Data | Special Selections | Edit.
